I think people often downplay just how complex maintaining Joomla can be, which is not necessarily about Joomla itself, but the wide range of components & add-ons and the rats’ nest of potential incompatibilities that brings. Wordpress will not be your saviour in this regard — I’m sure you can get just as messed up there.
There is definitely a bit of a comprehension gap between developers (working in environments they can control minutely) and (a certain proportion of) end-users (working with shared hosting sites and CPanel).
The scenario you mention snowgoose sounds like it could be caused by a quirk of CPanel. If you just change the PHP version, that doesn’t necessarily mean it will also use the same PHP Extensions. You need to take a screenshot or make a list before changing the version so you can make sure you have all the right extensions. Some requirements might also change between Joomla & PHP versions, not to mention versions of components.
I took an interest in this thread purely because on one site Community Builder has started nagging about wanting PHP 8.2 — “This server is running PHP 8.1.27, which is an outdated version.”.
